Hawaiian Carrot Pineapple Cake π₯π
Ingredients:
-2 cups all-purpose flour
-1 cup granulated sugar
-1 teaspoon baking powder
-1 teaspoon baking soda
-Β½ teaspoon salt
-1 teaspoon ground cinnamon
-Β½ teaspoon ground nutmeg
-Β½ teaspoon ground ginger
-1 cup vegetable oil
-4 large eggs
-2 cups grated carrots
-1 cup crushed pineapple, drained
-1 teaspoon vanilla extract
-Β½ cup chopped walnuts (optional)
-Cream cheese frosting (store-bought or homemade)
Directions:
Preheat your oven to 350Β°F (175Β°C). Grease and flour a 9×13-inch baking pan.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, beat together the vegetable oil, eggs, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in the grated carrots, crushed pineapple, and chopped walnuts (if using).
Pour the batter into the prepared baking pan and spread evenly.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before frosting with cream cheese frosting.
